The kitchen menu is divided into four sections: meat and poultry, fish and seafood, plants and desserts. We focus on mixing flavors without being tied to their origin and experimenting. We can mix Asia with Peru (serving daikon tacos), France with Japan (serving foie gras as sushi or marbled beef with lotus) and so on.

The cocktail menu is divided into 4 sections: herbs and trees, fruits and berries, citrus and umami. Each cocktail is built around a single focal flavor. Cocktails can be complex in composition and technique, but very simple to name and understand for the guest. Also, behind our bar, any off-menu drink can be made at the guest's request.
